This is from “From a Monastery Kitchen” which I posted about the other day week.

  • 1.5 cups thinly sliced apples
  • 3/4 cups molasses
  • 1/3 cup shortening (I used butter)
  • 1/2 cup hot water
  • 2.5 cups flour
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp nutmeg
  • 1 tablespoon baking powder
  • 1/4 tsp salt

Slowly cook apples in molasses until tender. Cool. Melt shortening/butter in hot water. Sift all dry ingredients, and gradually add the hot water mixture, stirring constantly to keep smooth. Stir in molasses and apple mixture. Pour into greased oblong 8×12″ pan. Bake at 350F for about 30 mins. Serve warm.

I’ve modified this to add an egg, which seems to make it slice better when cooled. I mix the egg in before the other wet ingredients, and I think it’s reached a happy place. However, I’m still contemplating some further modifications to use wholemeal flour, reduce the sugar, and put in raisins instead. *ponders*
